5 Ingredient Cauli Rice


Cauliflower: the perfect low carb substitute for rice. Having a vietnamese/chinese background means I'm a huge sucker for fried rice! It was definitely a household staple growing up, and I absolute love eating it. But if you're after a guilt-free low carb meal, then cauli rice is the perfect option. It's delicious, tastes like rice, gluten free, lactose free and sugar free. So here's my go to 5 ingredient cauli rice (vegetarian option) below.

Ingredients: (4 serves)

-4 cups chopped cauliflower (approximately 1/2 cauliflower)

-500g skinless chicken breast diced (vegetarian option: substitute for 400g tofu)

-1.5 cups chopped green beans

-5 eggs whisk

-75mL (just under 1/3 cup soya sauce)

-Coconut oil spray (for cooking)

Main kitchen items:

-Non-stick fry pan

-Food processor

-Kitchen scale


-Using a food processor chop 1/2 cauliflower (should equate to about 4 cups).

-On a high heat, lightly spray non-stick fry pan with coconut oil and add diced chicken breast. Cook for 15-20min or until lightly brown.

-Blanch green beans for 2min and then add to fry pan. Fry for 3min.

-Add whisk eggs and chopped cauliflower to frypan. Fry for another 3-4min.

-Add in soya sauce, stir for 1min.

-Serve with extra veggies or eat as is. Bon appetit.
