Another Cauli Rice

With the warmer weather here in Australia, many of us are probably trying to cut back on the carbs and therefore downing a lot of salad to be summer ready. But why have boring salads when you can have fried rice?  Delicious guilt-free low carb cauli rice and yes it tastes good! It's also gluten free, lactose free and sugar free. I'm kinda obsessed with it at the moment and you've seen me post about it before, but here's another cauli rice I threw together for this week's meal-prep.

Ingredients: (4 serves)

-3 cups chopped cauliflower (approximately 1/2 cauliflower)

-440g skinless chicken breast diced

-1 cup sweet corn kernels

-1 carrot peeled and diced 

-1 broccoli chopped and steamed

-3 eggs whisked

-1/4 cup soya sauce (approx 60ml)

-Coconut oil spray (for cooking)

Main kitchen items:

-Non-stick fry pan

-Food processor

-Kitchen scale

Method:

-Using a food processor chop 1/2 small cauliflower (should equate to about 3 cups).

-Steam broccoli in steamer for 5 min.

-On a high heat, lightly spray non-stick fry pan with coconut oil and add diced chicken breast. Cook for 10-15min or until lightly brown. Then take off heat

-Add diced carrot and corn kernels to pan for 3-4min stirring occasionally. 

-Add whisked eggs and chopped cauliflower to frypan. Fry for another 3-4min.

-Add in soya sauce, stir for 1min.

-Top with steamed broccoli and you're ready to serve.
