Baked salmon soya soba noodles

If you're super busy and are short on time, baked salmon is a super quick and easy protein to cook. Today for my four day meal-prep, I've gone with a quick 6 ingredient prep that only takes 30min to prep and cook all up. Here are the ingredients:

-460g boneless and skinless salmon fillets 

-4 Tbs soya sauce

-1 bunch of broccolini (baby broccoli) 

-100g frozen broad beans

-180g Soba noodles

-Cracked pepper

Main kitchen items:







-Pre-heat oven to 200C or 392 F

-Line oven tray with baking paper, add all four salmon fillets to tray, crack pepper over the top and bake in oven for 8min.

-Cut an inch off the ends of the broccolini, then cut them into halves and cook in steamer for 4min.

-Blanch 100g broad beans in a bowl.

-Cook soba noodles in hot water in saucepan on high heat for 3-4min.

Once everything is cooked and cooled for a couple minutes, divide salmon, noodles, broccolini and broad beans into 4 separate containers, add 1 tablespoon of soya sauce over the top of each and they're ready for the fridge. I tend to freeze all my meals except for one, so it stays fresher for longer.

It's a great meal for lunch or dinner and will definitely keep your stomach full.
